Ingredients
Scale
For the rim:
- 1 organic lime wedge
- 1/4 cup Tajín
For the mocktail:
- 2–3 organic jalapeño wheels (remove seeds)
- 6 organic mint leaves
- 2 tsp. demerara sugar (or 1 oz. simple syrup)
- 1 oz. organic lime juice
- ½ – ¾ cup organic pineapple juice
- Topo Chico
Garnish:
- More mint leaves or a lime wheel
Instructions
- Sprinkle the Tajín on a plate.
- Rub a lowball glass with the lime wedge and then rim with the Tajín.
- Add the jalapeño wheels, mint leaves, demerara sugar (or simple syrup), and lime juice to your glass.
- Muddle thoroughly (about 20-30 seconds).
- Pour your pineapple juice into your glass.
- Top with Topo Chico.
- Finally, garnish with either more mint leaves or a lime wheel (my personal fave) and enjoy! 🙂
